Ingredients:
- 1 cup basmati rice
- 250g chicken, cut into small pieces
- 1 onion, thinly sliced
- 1 tomato, chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, slit
- 2 cups chicken broth or water
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil or ghee
- Fresh cilantro leaves for garnish
Instructions:
1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside.
2. Heat oil or ghee in a large pot or deep skillet over medium heat. Add cumin seeds and let them splutter.
3. Add sliced onions and sauté until they turn golden brown.
4. Add minced garlic, grated ginger, and green chilies. Sauté for another minute.
5. Add chopped tomatoes and cook until they soften.
6. Now, add the chicken pieces and cook until they are no longer pink on the outside.
7. Add turmeric powder, coriander powder, garam masala, and salt. Mix well to coat the chicken pieces with the spices.
8. Add the soaked and drained rice to the pot. Stir gently to combine with the chicken and spices.
9. Pour in the chicken broth or water. Bring the mixture to a boil.
10. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed. Make sure not to stir too much to avoid breaking the rice grains.
11. Once the rice is cooked, turn off the heat and let the pulao sit covered for another 5 minutes.
12. Fluff the pulao with a fork and garnish with fresh cilantro leaves before serving.
