Leftover Rice Kheer
Leftover rice kheer is a fantastic way to utilize excess rice and create a delightful dessert. Here's a simplified version of the recipe:
### Ingredients:
- Leftover cooked rice (about 1 cup)
- 3 cups milk
- 1/4 cup sugar (adjust to taste)
- 1/4 teaspoon cardamom powder
- A handful of chopped nuts (like almonds, cashews, pistachios) for garnish
- A pinch of saffron (optional)
### Instructions:
1. In a saucepan, combine the leftover rice and milk.
2. Place the saucepan over medium heat and bring the mixture to a gentle boil while stirring occasionally.
3. Once it starts boiling, reduce the heat to low and let it simmer for about 15-20 minutes, stirring occasionally. This allows the flavors to meld and the mixture to thicken.
4. Add sugar, cardamom powder, and saffron (if using), and stir until the sugar dissolves completely.
5. Let the kheer simmer for another 5-10 minutes until it reaches the desired consistency. Keep in mind that it will thicken further upon cooling.
6. Once done, turn off the heat and let the kheer cool down for a few minutes.
7. Transfer the kheer to serving bowls or glasses.
8. Garnish with chopped nuts.
9. You can serve the kheer warm or chilled, according to your preference. If serving chilled, refrigerate it for a few hours before serving.
Enjoy your delicious leftover rice kheer!
