Maash Ki Daal - Urad Dal
Here's a traditional Pakistani recipe for making Maash ki daal:
Ingredients:
- 1 cup urad dal (maash ki daal)
- 3 cups water
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 green chilies, chopped
- 1 teaspoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin seeds
- Salt to taste
- 2 tablespoons cooking oil
- Fresh coriander leaves for garnish
Instructions:
1. Rinse the urad dal thoroughly under running water until the water runs clear. Soak the dal in water for about 30 minutes to an hour. This will help soften the dal and reduce cooking time.
2. After soaking, drain the water from the dal and transfer it to a pressure cooker or a deep pot. Add 3 cups of water, salt, and turmeric powder. Cook the dal until it becomes soft and mushy. If using a pressure cooker, cook for about 5-6 whistles, or if using a pot, simmer for about 30-40 minutes, stirring occasionally.
3. Once the dal is cooked, mash it with the back of a spoon or a potato masher to achieve a smooth consistency. Set aside.
4. In a separate pan, heat the cooking oil over medium heat. Add the cumin seeds and allow them to splutter.
5. Add the chopped onions to the pan and sauté until they turn golden brown.
6. Add the ginger-garlic paste and chopped green chilies to the pan. Sauté for another 2-3 minutes until the raw aroma of ginger-garlic disappears.
7. Add the chopped tomatoes to the pan along with red chili powder. Cook until the tomatoes become soft and the oil starts to separate from the masala.
8. Once the masala is ready, add the cooked and mashed urad dal to the pan. Mix well and simmer for a few minutes to allow the flavors to blend together.
9. Adjust the consistency of the dal by adding more water if necessary. Simmer for another 5-10 minutes until the dal is heated through.
10. Garnish the dal with fresh coriander leaves and serve hot with rice or roti.
