Aloo Gosht Pakistani Meat & Potato Curry


Aloo Gosht is a traditional Pakistani dish that combines tender pieces of meat (usually mutton or beef) with potatoes in a flavorful curry sauce. Here's a basic recipe to get you started:

### Ingredients:
- 500g mutton or beef, cut into bite-sized pieces
- 2 large potatoes, peeled and cut into chunks
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 4 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, slit lengthwise (adjust according to your spice preference)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 1/4 cup oil
- Fresh cilantro leaves for garnish

### Instructions:

1. Heat oil in a large pot or pressure cooker over medium heat. Add cumin seeds and let them splutter.

2. Add chopped onions and cook until they turn golden brown.

3. Add minced garlic and grated ginger. Sauté for another minute until the raw smell disappears.

4. Add the chopped tomatoes, green chilies, and all the spices (coriander powder, turmeric powder, red chili powder, and salt). Cook until the tomatoes are softened and the oil begins to separate from the masala.

5. Add the meat pieces to the pot and coat them well with the masala. Cook for 5-7 minutes, stirring occasionally, until the meat is browned.

6. Add enough water to cover the meat and bring it to a boil. If using a pressure cooker, cover with the lid and cook for about 15-20 minutes or until the meat is almost tender. If using a regular pot, cover and simmer until the meat is tender, adding more water if necessary.

7. Once the meat is almost cooked, add the potato chunks to the pot. Cook until the potatoes are soft and the meat is completely tender. Adjust the seasoning if needed.

8. Garnish with fresh cilantro leaves and serve hot with naan or rice.
